Nutrition and Diet Planning for Improving Physical and Mental Wellbeing is Here.
Nutrition guidance can be life changing! Especially if you need to improve health markers such as high cholesterol and high blood pressure. It’s also vital if you want to lose weight, gain strength or increase personal performance and haven’t made much progress on your own.
I use a holistic, whole-food-whole-person approach to nutrition that encompasses not just eating habits but also lifestyle and sleep habits too.
My philosophy is very simple and based on avoiding unnecessary supplements, additives, processed foods and fitness food trends. I also avoid using common pre-formatted diets or fad nutrition systems.
Instead, I encourage you to focus on understanding yourself, understanding your relationship with food and taking control of what and how you eat on a daily bases.
Further, I help you apply what you learn about food to your specific health and fitness needs.
Professional Chef & Cooking Mentor

Brisbane, Australia 2006
Previous to wellness coaching I had wonderful experiences and success as a professional chef. And feel grateful to have worked in some of the most prestigious restaurants in the UK, Australia and New Zealand between 1996 and 2008.
Furthering my experience in gastronomy with stage’s in Hong Kong, Thailand and Malaysia. Where I learned about the traditional cooking methods of those countries and taking note of the relationship between the foods eaten, and the health and longevity of the people.
Since then and for over 15 years I have been helping my clients take control of their eating and lifestyle habits. Notably, having spent over 9 years experience working with people in the USA.
With the USA’s high obesity rates and being generally recognized as one of the unhealthiest nations in the developed world. I quickly learned and became proficient in helping people improve their health with exercise and nutrition coaching.
Certified in Nutrition Guidance

I’m a certified nutrition guidance counselor and an exercise and sports nutrition educator. Holding a NVQ in Kitchen Management and experienced in teaching everyday people and athletes alike, all about the intricacies of healthy eating. With the valuable benefit of being able to teach my clients how to prepare, cook and store nutritious and delicious, scratch made meals that taste great and look amazing.
If there’s one thing I’ve learned as a chef, it is this… People like food to look pretty and want it to taste as good as it looks. If it doesn’t, they’re disappointed.
~Coach Mark
My accountability and approach to food will successfully identify your most unhealthy behaviors and motivate you to practice and improve on new healthy habits. My health focused nutritional coaching is also about lifestyle and goes well beyond just what or when you eat.
In a world of increasing AI based health apps it’s becoming harder to find face to face counseling with a real human being who wants to listen to you with the goal of understanding on an emotional level, as well as an intellectual or technical one.
Technology can be very helpful as a supplemental tool but ultimately lacks empathy, compassion and an understanding of an individual.
I do use some technology to make progress tracking easy, but primarily focus on real human interaction.

A Poem About Cooking and Love
Mother's Kitchen In the heart of our home, where love meets heat, A symphony of flavors, a dance so sweet. Mother's kitchen, where memories unfold, Each dish a story, from days of old. A pinch of spice, a dash of care, Her hands bring magic to the air. Her recipes, passed down with pride, Fill our souls and hearts, side by side. From simmering pots to sizzling pans, Her culinary prowess, no one understands. Whispers of garlic, whispers of love, Ingredients blessed from high above. In this sacred space, we find delight, As mom's cooking brings our senses to new heights. Her flavors sing with every bite, Each meal a labor of love, day or night. -Author Unknown
There is something special about the aroma and taste of a meal cooked by a parents loving hands. A farther or mothers cooking has the unique ability to transport us back to our childhood, evoking memories of warmth, comfort, and nourishment.
In poetry, countless verses have been imagined to express gratitude, love, and nostalgia for the tasty dishes that our mothers and fathers have prepared for us.
For me this poem captures the essence of the kitchen, the flavors that dance, and the love that goes into every meal.
